Kamounia is a traditional Sudanese stew renowned for its bold and smoky flavors derived from rich spices and tender, slow-cooked meat. Originating from Sudan, this hearty dish is characterized by the distinct aroma and warming taste of cumin, from which it derives its name. Often enjoyed with warm bread or rice, Kamounia serves as a comforting and fulfilling meal steeped in cultural heritage.

Ingredients

  • beef (cubed) – 1 kg / 2.2 lbs
  • onions (chopped) – 2 large / 300 g
  • garlic cloves (minced) – 4 cloves
  • ground cumin – 2 tablespoons / 14 g
  • tomato paste – 3 tablespoons / 45 g
  • beef stock – 3 cups / 720 ml
  • olive oil – 3 tablespoons / 45 ml
  • salt – to taste
  • black pepper – to taste
  • coriander leaves (for garnish) – a handful

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and sauté until translucent, about 5 minutes.
  3. Stir in garlic and cook for another 1 minute until fragrant.
  4. Add the beef cubes and brown them on all sides.
  5. Mix in the ground cumin and tomato paste, cooking for 2 minutes.
  6. Pour in the beef stock, bring to a boil, then lower to a simmer.
  7. Cover and let the stew cook for 1.5 to 2 hours until the meat is tender.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped coriander leaves before serving.
