Ingredients
- beef chuck – 1 lb / 450 g
- tomatoes, diced – 2 cups / 480 g
- onions, chopped – 1 cup / 160 g
- vegetable oil – 2 tbsp / 30 ml
- garlic cloves, minced – 4
- cumin powder – 1 tsp / 3 g
- coriander powder – 1 tsp / 2 g
- cayenne pepper – 1/2 tsp / 1 g
- salt – 2 tsp / 12 g
- black pepper – 1 tsp / 2 g
- water – 2 cups / 480 ml
- fresh cilantro, chopped – 1/4 cup / 15 g
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until golden and translucent.
- Add the minced garlic and cook for another minute until fragrant.
- Increase the heat to medium-high, add the beef chuck pieces, and brown them on all sides.
- Stir in the diced tomatoes, cumin, coriander, cayenne, salt, and black pepper. Cook for about 5 minutes, allowing the tomatoes to break down.
- Pour in the water and bring the mixture to a simmer. Lower the heat, cover, and let it cook for about 1.5 to 2 hours, or until the beef is tender.
- Adjust seasoning if necessary. Stir in the fresh cilantro just before serving.
