Ingredients

  • Shiro powder – 1 cup / 130 g
  • Onion – 1 large, finely chopped
  • Garlic – 2 cloves, minced
  • Ginger – 1 tbsp / 6 g, grated
  • Berbere spice – 2 tbsp / 15 g
  • Olive oil – 2 tbsp / 30 ml
  • Water – 3 cups / 720 ml
  • Salt – to taste
  • Black pepper – 1/2 tsp / 1 g

Instructions

  1. Heat the olive oil in a large saucepan over medium heat.
  2. Add the finely chopped onion and sauté until golden, about 5 minutes.
  3. Stir in the garlic, ginger, and berbere spice, cooking for an additional 2 minutes.
  4. Gradually add the shiro powder, stirring constantly to prevent lumps.
  5. Pour in the water slowly, continuing to stir until well combined.
  6. Bring the mixture to a simmer, then reduce heat to low.
  7. Cook for 20-25 minutes, stirring occasionally, until thickened to a desired consistency.
  8. Season with salt and black pepper to taste before serving.

  • Berbere spice -> Cayenne mixed with paprika and turmeric
