Wenchang Chicken, known as ‘Wenchang Ji’ in Mandarin, is a celebrated dish from the island of Hainan, China. With roots tracing back to the region’s rich culinary history, this dish highlights the use of native Hainanese chickens, prized for their firm, juicy meat. Traditionally, Wenchang Chicken is poached to perfection, resulting in tender, succulent meat that’s subtly flavored with aromatic ginger and scallions. This dish is typically served with an accompaniment of fragrant rice and garnished with herbs, taking the diner on a sensory journey that encapsulates the essence of authentic Chinese cuisine.
Ingredients
- Whole chicken – 1.5 kg / 3.3 lb
- Ginger – 100 g / 3.5 oz, thinly sliced
- Scallions – 4 stalks, cut into thirds
- Salt – 2 tablespoons
- Sesame oil – 2 tablespoons
- Shaoxing wine – 3 tablespoons
- Pepper – 1 teaspoon
Instructions
- Rinse the whole chicken under cold water and pat dry.
- Rub the chicken inside and out with 1 tablespoon of salt.
- In a large pot, place the chicken and add just enough water to submerge it. Add ginger and scallions.
- Bring the water to a boil over high heat. Reduce the heat to low and let it simmer for about 30 minutes, or until the chicken is cooked through.
- Carefully remove the chicken from the pot and place it in an ice bath to cool for 5 minutes. This will help make the skin firmer.
- Rub the cooled chicken with 1 tablespoon of sesame oil.
- Carve the chicken into serving pieces and drizzle with Shaoxing wine and sprinkle with pepper before serving.
