Lychee Pork, or Lizhi Rou, is a cherished dish from the Guangdong province of China, celebrated for its delightful balance of sweet and savory flavors. Ingredients

  • Pork shoulder – 500 g / 1.1 lbs
  • Cornstarch – 1/2 cup / 60 g
  • Egg – 1 large
  • Vegetable oil – for frying
  • Garlic – 2 cloves, minced
  • Ginger – 1-inch piece, minced
  • Soy sauce – 3 tbsp
  • Rice vinegar – 2 tbsp
  • Sugar – 3 tbsp
  • Ketchup – 4 tbsp
  • Water – 1/2 cup / 120 ml
  • Bell pepper – 1 large, cut into cubes
  • Pineapple chunks – 1/2 cup / 120 g
  • Scallions – 2, cut into 1-inch pieces

Instructions

  1. Cut the pork shoulder into 1-inch cubes. Season lightly with salt.
  2. In a bowl, beat the egg and add cornstarch to create a batter. Coat the pork cubes thoroughly in the batter.
  3. Heat vegetable oil in a deep pan over medium-high heat and deep-fry the pork until golden and crispy. Remove and drain on paper towels.
  4. In a separate pan, heat a tablespoon of oil over medium heat. Add minced garlic and ginger, frying until fragrant.
  5. Stir in soy sauce, rice vinegar, sugar, ketchup, and water to create the sauce. Allow it to simmer for 5 minutes.
  6. Add bell pepper, pineapple, and the fried pork into the sauce, stirring to coat everything evenly. Cook for another 3 minutes.
  7. Garnish with scallions before serving.
