This soup symbolizes health and happiness for the upcoming year. Ingredients

  • Hemp seeds – 1 cup / 150 g
  • Water – 4 cups / 960 ml
  • Milk – 2 cups / 480 ml
  • Salt – 1 teaspoon / 6 g
  • Honey – 1 tablespoon / 21 g
  • Butter – 2 tablespoons / 28 g
  • All-purpose flour – 2 tablespoons / 16 g

Instructions

  1. Rinse the hemp seeds thoroughly under cold running water.
  2. In a large pot, combine the hemp seeds with water, and bring to a simmer over medium heat.
  3. Once simmering, lower the heat and continue to cook for 45 minutes, stirring occasionally, until the seeds are softened.
  4. Strain the mixture through a fine sieve or cheesecloth, collecting the liquid into a clean pot. Discard the seed husk or save it for another use.
  5. Return the strained soup to low heat and stir in the milk, salt, and honey until heated through.
  6. In a small pan, melt the butter over medium heat, then add the flour, stirring constantly to make a roux. Cook for 2-3 minutes until light brown.
  7. Whisk the roux into the soup, stirring well to ensure there are no lumps. Cook for another 5 minutes until thickened slightly.
  8. Serve warm, garnished with toasted hemp seeds or fresh herbs, if desired.
