  • milk – 500 ml / 2 cups
  • vegetable broth – 500 ml / 2 cups
  • caraway seeds – 1 teaspoon / 2 g
  • salt – to taste
  • black pepper – to taste

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the rendered fat in the pot.
  2. Melt the butter in the same pot, then stir in the flour to form a roux. Cook, stirring constantly until golden brown.
  3. Gradually whisk in the milk and vegetable broth, ensuring there are no lumps.
  4. Add the crumbled bryndza to the mixture and stir until the cheese has fully melted.
  5. Introduce the caraway seeds, salt, and black pepper. Bring the soup to a gentle simmer and cook for 15 minutes, stirring occasionally.
  6. Adjust seasoning to taste. Serve hot, garnished with crispy bacon.
