Idrijski žlikrofi are a traditional Slovenian pasta dish originating from the town of Idrija, known for its rich cultural heritage and mining history. These dumpling-like pasta pockets are filled with a savory potato filling, often flavored with herbs and bacon, making them a comforting and delightful dish. Traditionally, they are shaped like small hats and served as a side dish or appetizer, often accompanying rich meat sauces or stews.
Ingredients
- All-purpose flour – 2 cups / 240 g
- Eggs – 2 large
- Water – 1/4 cup / 60 ml
- Potatoes – 1 lb / 450 g
- Bacon – 3 slices
- Onion – 1 medium
- Butter – 2 tbsp / 30 g
- Salt – 1 tsp
- Black pepper – 1/2 tsp
- Chives – 2 tbsp, chopped
Instructions
- Peel and boil potatoes until tender. Mash them and set aside.
- Fry bacon until crispy. Remove and crumble.
- In the same pan, sauté the onion until translucent. Add to the mashed potatoes along with bacon, butter, salt, pepper, and chives. Mix well.
- In a bowl, combine flour, eggs, and water to form a dough. Knead until smooth and let rest for 30 minutes.
- Roll out the dough to about 1/8-inch thickness. Cut into 2-inch squares.
- Place a teaspoon of filling in the center of each square. Fold and seal the edges, forming small hat shapes.
- Boil the dumplings in salted water until they float to the top, about 5 minutes.
- Serve with a choice of meat sauce or as a side to stews.
