Żeberka wędzone, or Smoked Ribs, is a traditional Polish meat dish renowned for its rich flavors and tender texture. Typically served during festive occasions and family gatherings, these ribs are cherished for their ability to bring warmth and comfort through the mingling of earthy spices and a hint of sweetness customary of Polish cuisine.
Ingredients
- Pork ribs – 2 kg / 4.4 lbs
- Garlic cloves – 5 cloves, minced
- Bay leaves – 2 whole
- Black pepper – 1 tsp freshly ground
- Salt – 2 tbsp
- Paprika – 1 tbsp smoked
- Brown sugar – 2 tbsp
- Apple cider vinegar – 1/4 cup / 60 ml
- Water – 1 cup / 240 ml
- Liquid smoke – 2 tbsp
Instructions
- 1. Rinse the ribs under cold water and pat dry with paper towels.
- 2. Combine garlic, bay leaves, black pepper, salt, paprika, and brown sugar in a bowl.
- 3. Rub this mixture thoroughly over the ribs, covering all surfaces.
- 4. Lay the ribs in a baking dish and add apple cider vinegar and water.
- 5. Cover and refrigerate for at least 2 hours, or overnight for deeper flavor.
- 6. Preheat your oven to 150°C (300°F).
- 7. Remove ribs from the refrigerator and add liquid smoke to the baking dish.
- 8. Cover the baking dish with foil and bake for 2.5 to 3 hours.
- 9. Check for tenderness and crisp the ribs under a broiler for 5-10 minutes if desired.
- 10. Let the ribs rest for 10 minutes before serving.
Substitutions
- Liquid smoke -> Smoked paprika or a wood-chip smoker
- Apple cider vinegar -> White wine vinegar
