Jidáše – Classic

Jidáše is a traditional Czech pastry, typically crafted to celebrate Easter. These sweet, yeast-based pastries are intricately twisted into shapes that resemble ropes or knots, a reference to Judas’s betrayal. The origins of Jidáše are deeply rooted in Czech folklore, where they symbolize forgiveness and new beginnings. With their golden crust and subtle honey sweetness, they embody the warmth of Czech traditions and are enjoyed by families gathering to commemorate the joyous occasion of Easter.
Ingredients
- all-purpose flour – 500 g / 4 cups
- warm milk – 250 ml / 1 cup
- active dry yeast – 7 g / 1 packet
- honey – 60 ml / 1/4 cup
- unsalted butter – 100 g / 1/2 cup
- egg yolks – 3
- lemon zest – from 1 lemon
- salt – 1 tsp
- raisins – 50 g / 1/3 cup
- honey (for glazing) – 60 ml / 1/4 cup
- water – 30 ml / 2 tbsp
Instructions
- In a small bowl, dissolve yeast in warm milk and let it sit for 10 minutes until frothy.
- In a large bowl, combine flour and salt. Add the yeast mixture, honey, softened butter, egg yolks, lemon zest, and raisins. Mix until a soft dough forms.
- Knead the dough on a lightly floured surface for about 10 minutes, until smooth and elastic.
- Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1.5 hours until doubled in size.
- Punch down the dough and divide it into 8 equal parts. Roll each piece into a rope and shape it into a twisted knot or other desired shape.
- Place the shaped dough pieces on a baking sheet lined with parchment paper. Cover and let them rise for another 30 minutes.
- Preheat the oven to 180°C (350°F).
- Bake the Jidáše for 20-25 minutes, or until golden brown.
- While baking, prepare the glaze by mixing honey and water in a small saucepan. Heat until combined.
- Once the Jidáše are out of the oven, brush them with the honey glaze while still warm.
