Ingredients

  • lamb shoulder, diced – 500 g / 1 lb
  • green beans, trimmed – 300 g / 10 oz
  • potatoes, diced – 300 g / 10 oz
  • onion, chopped – 1 medium
  • garlic cloves, minced – 3 cloves
  • sweet Hungarian paprika – 2 tablespoons
  • caraway seeds – 1 teaspoon
  • beef or vegetable stock – 1.5 liters / 6 cups
  • sour cream – 150 ml / 0.5 cup
  • vinegar – 2 tablespoons
  • salt – to taste
  • black pepper – to taste
  • oil – 2 tablespoons

Instructions

  1. Heat oil in a large pot over medium heat and sauté the onions until translucent.
  2. Add garlic, caraway seeds, and sweet paprika, stirring continuously to avoid burning.
  3. Increase heat to medium-high, add the diced lamb, and brown on all sides.
  4. Pour in the stock, add salt and pepper, and bring to a boil.
  5. Reduce to a simmer, cover, and cook for about 45 minutes until the lamb is tender.
  6. Add green beans and potatoes; continue to cook for an additional 15 minutes.
  7. Stir in vinegar and adjust seasoning if needed.
  8. Serve hot with a generous spoon of sour cream on top.
