Gołąbki, an emblematic Polish dish, traditionally translates to ‘little pigeons.’ These hearty cabbage rolls are embraced across Poland for their comforting blend of flavors. The origins trace back centuries and are a staple in Polish cuisine representing a culinary blend of agricultural produce like cabbage and ground meat, typically pork or beef, layered with seasonings and rice. Gołąbki is usually served with tomato sauce, enhancing its savory appeal. With its roots deeply embedded in Polish gatherings and festive occasions, this dish brings with it the warmth of home and heart.

Ingredients

  • Cabbage – 1 large head
  • Ground pork – 500 g / 1 lb
  • Ground beef – 500 g / 1 lb
  • Rice (uncooked) – 1 cup / 200 g
  • Onion, finely chopped – 1 medium
  • Garlic cloves, minced – 2 cloves
  • Tomato sauce – 2 cups / 480 ml
  • Eggs – 2
  • Salt – 1 tsp
  • Black pepper – 1/2 tsp
  • Vegetable oil – 2 tbsp

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Carefully remove the core from the cabbage. Place the whole head in a large pot of boiling water, simmer until the leaves are pliable, about 5 minutes.
  3. Separate the cabbage leaves carefully and set aside.
  4. In a skillet sauté onion and garlic in oil until transparent.
  5. Cook rice according to package instructions.
  6. In a large bowl, mix the ground pork, ground beef, cooked rice, sautéed onions and garlic, eggs, salt, and pepper until well combined.
  7. Lay each cabbage leaf flat; place about 2 tablespoons of filling at the stem end, then roll tightly folding in sides.
  8. Place rolls seam side down in a baking dish, pour tomato sauce over them.
  9. Cover and bake in the preheated oven for 60 minutes.

Substitutions

  • Ground pork -> Turkey or chicken
  • Rice -> Quinoa or bulgur
