Mastoba is a traditional, heartwarming soup hailing from Tajikistan, a country known for its rich culinary heritage influenced by Persian, Russian, and Central Asian flavors. This hearty soup is a staple in Tajik households, often served as a comforting dish during the colder months. Traditionally, Mastoba harmonizes rice, vegetables, and meat in a flavorful broth, seasoned with a mixture of aromatic spices that reflect the country’s diverse influences. Ingredients

  • beef – 500 g / 1.1 lb
  • onion – 1 large / 150 g, chopped
  • carrots – 2 medium / 120 g, diced
  • potatoes – 2 medium / 300 g, diced
  • tomato paste – 3 tablespoons / 45 g
  • rice – 1 cup / 200 g
  • garlic – 3 cloves, minced
  • water – 6 cups / 1.4 liters
  • bay leaf – 2 leaves
  • cumin – 1 teaspoon
  • salt – to taste
  • black pepper – to taste
  • oil – 2 tablespoons / 30 ml

Instructions

  1. Heat oil in a large pot over medium heat. Add chopped onions and cook until translucent.
  2. Add the beef to the pot and cook until browned on all sides.
  3. Stir in the tomato paste and mix well with the meat.
  4. Add diced carrots and potatoes to the pot, followed by minced garlic, cooking for another 3 minutes.
  5. Pour in the water and bring to a boil.
  6. Add rice, bay leaf, cumin, salt, and pepper. Stir to combine.
  7. Reduce heat to low and let the soup simmer for about 30–40 minutes, stirring occasionally, until the meat and rice are cooked through.
  8. Adjust seasoning to taste and serve hot.

  • rice -> barley or quinoa
