Tamales Pisques are a traditional Salvadoran delight, originating from the vibrant kitchens of El Salvador. These vegetarian tamales are made from masa (corn dough) filled with a mixture of spiced refried beans, wrapped in banana leaves, and then steamed to perfection. A staple in Salvadoran cuisine, tamales pisques are often served during festive occasions and family gatherings, symbolizing togetherness and celebration. Ingredients

  • masa harina – 2 cups / 256 g
  • vegetable broth – 2 cups / 480 ml
  • refried black beans – 1 1/2 cups / 360 g
  • onion, finely chopped – 1 medium
  • garlic, minced – 3 cloves
  • butter – 3 tbsp / 42 g
  • banana leaves – 10 large pieces
  • salt – 1 tsp / 6 g
  • ground cumin – 1 tsp / 4 g
  • black pepper – 1/2 tsp / 1 g

Instructions

  1. In a skillet, melt butter over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
  2. Add minced garlic, refried beans, cumin, salt, and black pepper. Stir well and cook for an additional 3 minutes. Set aside to cool.
  3. In a large mixing bowl, combine masa harina and vegetable broth. Mix until a smooth dough forms.
  4. Cut banana leaves into rectangles about 10×12 inches and soften them by soaking in hot water or passing them over heat.
  5. Place a dollop of masa towards one end of the banana leaf, spread into a square, and top with a tablespoon of bean mixture.
  6. Fold the banana leaf over the filling, tucking in the sides to form a neat parcel.
  7. Steam tamales for 1 hour in a large pot with a steamer insert, checking occasionally to ensure water does not evaporate.
  8. Allow tamales to cool slightly before serving warm.
