Subanik is a traditional Guatemalan stew, a fusion of flavors and cultures, rooted deeply in the highlands of Guatemala. Originally a ceremonial dish of the Kʼicheʼ Maya, Subanik combines native ingredients with Spanish influences, resulting in a layered and complex flavor profile. This rich, red chili-based stew is a testament to the region’s culinary diversity, featuring a medley of meats and spices that create a hearty and flavorful dish.
Ingredients
- beef brisket – 500 g / 1 lb
- pork shoulder – 500 g / 1 lb
- chicken thighs – 500 g / 1 lb
- guaque chili peppers – 3
- pasilla chili peppers – 2
- roma tomatoes – 6
- epazote leaves – 2 tbsp, chopped
- garlic – 4 cloves
- white onion – 1 large, chopped
- corn masa – 1/2 cup / 60 g
- salt – to taste
- pepper – to taste
Instructions
- Roast the guaque and pasilla chili peppers, tomatoes, garlic, and onions on a hot skillet until slightly charred. Peel the tomatoes after roasting.
- Blend the roasted vegetables with a little water until smooth to create the chili paste.
- In a large pot, heat the chili paste over medium heat. Add the chopped epazote leaves and cook for 5 minutes.
- Cut the beef, pork, and chicken into bite-sized pieces. Add the meat to the pot and stir to coat them with the paste.
- Pour enough water to cover the meat, bring it to a boil, then reduce the heat and let it simmer for about 2 hours or until the meats are tender.
- Mix corn masa with a little water to form a slurry and stir it into the stew to thicken it.
- Season with salt and pepper to taste before serving.
