Ingredients
- shrimp – 1 lb / 450 g
- mussels – 1 lb / 450 g
- white fish fillets – 1 lb / 450 g
- coconut milk – 2 cups / 480 ml
- fish stock – 4 cups / 960 ml
- onion – 1 large, chopped
- bell pepper – 1 medium, chopped
- tomato – 2 large, chopped
- garlic cloves – 4, minced
- cilantro – 1/2 cup / 30 g, chopped
- olive oil – 2 tbsp / 30 ml
- lime – 2, juice only
- salt – to taste
- black pepper – to taste
- plantain – 1, sliced
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, bell pepper, garlic, and sauté until softened.
- Add the chopped tomato and cook for a few minutes until the tomatoes are slightly broken down.
- Pour in the coconut milk and fish stock. Bring to a gentle simmer.
- Add the sliced plantain to the pot and cook until it softens, about 5 minutes.
- Add the shrimp, mussels, and white fish to the pot. Simmer gently until the seafood is cooked, about 7-10 minutes.
