Ingredients
- oxtail – 2 lbs / 900 g
- water – 8 cups / 1.9 L
- diced tomatoes – 2 cups / 480 g
- sliced carrots – 2 cups / 240 g
- chopped onions – 1 cup / 150 g
- minced garlic – 4 cloves
- celery stalks – 2, sliced
- red bell pepper – 1, chopped
- cumin – 1 tsp / 2 g
- oregano – 1 tsp / 1 g
- salt – to taste
- black pepper – to taste
- fresh cilantro – 1/4 cup / 15 g, chopped
- lime – 1, juiced
Instructions
- 1. Rinse oxtail pieces under cold water and pat dry.
- 2. In a large pot, bring water to a boil and add oxtail.
- 3. Reduce heat and simmer for 1 hour, skimming any foam.
- 4. Add tomatoes, carrots, onions, garlic, celery, and bell pepper to the pot.
- 5. Stir in cumin, oregano, salt, and black pepper.
- 6. Continue to simmer on low heat for another 1.5 hours, or until the meat is tender.
- 7. Taste and adjust seasoning.
- 8. Stir in cilantro and lime juice before serving.
