Ingredients
- beef chuck – 1 kg / 2.2 lbs
- ripe tomatoes – 500 g / 1 lb
- onion – 1 large / 150 g
- green bell pepper – 1 medium / 120 g
- garlic – 3 cloves
- vegetable oil – 2 tbsp / 30 ml
- fresh cilantro – 1/4 cup / 10 g
- ground cumin – 1 tsp / 5 g
- paprika – 1 tsp / 5 g
- salt – to taste
- black pepper – to taste
- beef broth – 500 ml / 2 cups
Instructions
- Cut the beef chuck into bite-sized cubes. Season with salt and pepper.
- Heat the vegetable oil in a large pot over medium-high heat. Brown the beef on all sides, remove and set aside.
- In the same pot, add diced onion, minced garlic, and chopped bell pepper. Sauté until softened, about 5 minutes.
- Add the cubed tomatoes, ground cumin, and paprika. Cook for 3-4 minutes until the tomatoes start to break down.
- Return the beef to the pot and pour in the beef broth. Bring to a simmer.
- Reduce heat to low, cover, and let it cook for about 1.5 hours, occasionally stirring, until the beef is tender.
- Chop the cilantro and stir it into the pot just before serving.
