Ingredients

  • fresh corn – 4 ears / 340 g
  • coconut milk – 2 cups / 480 ml
  • spinach leaves – 2 cups / 60 g
  • palm oil – 2 tablespoons / 30 ml
  • onion – 1 medium, diced / 150 g
  • salt – 1 teaspoon / 5 g
  • pepper – 1/2 teaspoon / 2.5 g
  • smoked paprika – 1 teaspoon / 2.5 g

Instructions

  1. 1. Shuck the corn and carefully slice the kernels off the cobs.
  2. 2. In a large pot, heat palm oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. 3. Add the corn kernels, stir, and cook for another 5 minutes.
  4. 4. Pour in the coconut milk, add salt, pepper, and smoked paprika, then reduce heat to a low simmer.
  5. 5. Let the mixture cook for 15-20 minutes, stirring occasionally.
  6. 6. Add the spinach leaves, stirring them into the mixture until wilted, about 2-4 minutes.
  7. 7. Adjust seasonings to taste before serving warm.
