Ingredients

  • lobster tails – 4 large tails / about 600 g
  • coconut milk – 1 can / 400 ml
  • Jamaican curry powder – 2 tablespoons / 14 g
  • scallions – 4, finely chopped
  • garlic – 3 cloves, minced
  • ginger – 1 tablespoon, minced
  • thyme – 1 teaspoon, dried
  • scotch bonnet pepper – 1, seeded and minced
  • lime juice – 2 tablespoons
  • vegetable oil – 2 tablespoons
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Start by preparing the lobster tails. Use kitchen shears to cut down the back of each shell, then carefully remove the meat. Cut the lobster meat into 1-inch pieces.
  2. In a large pan, heat the vegetable oil over medium heat. Add the scallions, garlic, ginger, and scotch bonnet pepper. Sauté for 2-3 minutes until fragrant.
  3. Stir in the curry powder and thyme, cooking for an additional minute to release the flavors of the spices.
  4. Pour in the coconut milk and lime juice, stirring well to combine. Bring the mixture to a simmer.
  5. Add the lobster pieces to the pan, ensuring they are well-coated with the curry sauce.
  6. Cook the lobster for about 5-7 minutes or until cooked through and tender. Season with salt and black pepper to taste.
