Ingredients

  • Red bell pepper – 1 medium / 150 g
  • Garlic cloves – 6 cloves
  • Olive oil – 1/2 cup / 120 ml
  • Apple cider vinegar – 1/4 cup / 60 ml
  • Fresh cilantro – 1/4 cup / 15 g
  • Salt – 1 tsp / 5 g
  • Black pepper – 1/2 tsp / 2 g

Instructions

  1. Roast the red bell pepper: Preheat a broiler. Place the red bell pepper on a baking sheet and broil, turning every few minutes until the skin is charred all over. Transfer to a bowl, cover with plastic wrap, and let steam for 10 minutes. Peel, seed, and chop the pepper.
  2. In a blender, combine the roasted red bell pepper, garlic cloves, olive oil, apple cider vinegar, cilantro, salt, and black pepper.
  3. Blend until smooth and emulsified, adjusting seasoning to taste.
  4. Transfer the sauce to a serving bowl and serve immediately or refrigerate for up to one week.
