Ingredients

  • chicken thighs – 1 kg / 2.2 lbs
  • lime juice – 1/4 cup / 60 ml
  • allspice – 1 tsp
  • thyme – 1 tsp dried or 1 tbsp fresh
  • scotch bonnet pepper – 1, minced
  • garlic – 2 cloves, minced
  • ginger – 1 tsp, grated
  • brown sugar – 2 tbsp
  • coconut oil – 2 tbsp
  • salt – 1 tsp
  • bell pepper – 1, chopped
  • onion – 1 large, chopped
  • coconut milk – 1 cup / 240 ml

Instructions

  1. Rinse and dry the chicken thighs. Place them in a large bowl.
  2. Mix lime juice, allspice, thyme, scotch bonnet pepper, garlic, ginger, brown sugar, and salt into a marinade.
  3. Pour the marinade over the chicken, cover, and refrigerate for at least 2 hours, preferably overnight.
  4. Heat coconut oil in a large skillet over medium-high heat. Add chicken pieces, reserving the marinade, and brown on all sides.
  5. Remove chicken and set aside. In the same skillet, add onions and bell pepper; sauté until softened.
  6. Return the chicken to the skillet. Add the reserved marinade and coconut milk, stirring to combine.
  7. Cover and simmer on low heat for 30 minutes or until chicken is cooked through and tender.
  8. Serve hot over rice or with bread.
