Pastelón is a delightful Puerto Rican casserole that layers incredible flavors and textures into a single, savory dish. This traditional meal captures the essence of Puerto Rican cuisine, combining influences from the African, Spanish, and indigenous Taíno culinary heritage. Ingredients
- ripe plantains – 4 large / 800 g
- ground beef – 1 lb / 450 g
- olive oil – 2 tbsp
- onion, finely chopped – 1 medium / 150 g
- red bell pepper, finely chopped – 1 large / 200 g
- garlic cloves, minced – 3 cloves / 15 g
- tomato sauce – 8 oz / 240 ml
- ground cumin – 1 tsp
- dried oregano – 1 tsp
- adobo seasoning – 1 tsp
- shredded mozzarella cheese – 2 cups / 200 g
- salt – to taste
- black pepper – to taste
- eggs – 2 large
Instructions
- Preheat your oven to 350°F (175°C).
- Peel the plantains and slice them into thin strips, about 1/4 inch thick.
- In a large skillet, heat olive oil over medium heat. Fry the plantain slices until golden brown on both sides. Set aside on a paper towel-lined plate.
- In the same skillet, add more oil if needed and sauté onion, bell pepper, and garlic until the onion is translucent.
- Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned. Drain any excess fat.
- Stir in the tomato sauce, cumin, oregano, adobo, salt, and black pepper. Simmer for about 10 minutes to blend the flavors.
- In a greased baking dish, layer half of the fried plantains at the bottom.
- Spread the beef mixture over the plantains evenly, then top with half of the mozzarella.
- Repeat the layers with the remaining plantains, beef mixture, and cheese.
- Whisk eggs in a bowl and pour evenly over the top layer.
- Bake in the preheated oven for about 30 minutes, or until the cheese is bubbly and the top is golden.
- Let the pastelón rest for a few minutes before slicing and serving.
