Ingredients

  • goat meat – 2 lbs / 900 g, bone-in pieces
  • lime – 1, juice only
  • olive oil – 3 tbsp / 45 ml
  • onion – 1 large, chopped
  • garlic – 4 cloves, minced
  • green bell pepper – 1, chopped
  • tomatoes – 2 medium, chopped
  • paprika – 1 tsp / 2 g
  • ground cumin – 1 tsp / 2 g
  • cinnamon stick – 1
  • bay leaf – 1
  • thyme – 1 tsp / 1 g, dried
  • allspice – 1/2 tsp / 1 g
  • beef broth – 2 cups / 480 ml
  • potatoes – 2 large, peeled and diced
  • carrots – 2, sliced
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Rinse goat meat under cold water and pat dry. Rub with lime juice, then set aside for 10 minutes.
  2. In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent, about 5 minutes.
  3. Add garlic and bell pepper, cooking for another 2 minutes until aromatic.
  4. Stir in the tomatoes, paprika, cumin, cinnamon stick, bay leaf, thyme, and allspice. Cook for 2 minutes.
  5. Add the goat meat to the pot, browning on all sides for about 8 minutes.
  6. Pour in beef broth, bringing the mixture to a simmer. Cover and cook on low heat for 1.5 to 2 hours until meat is tender.
  7. Add potatoes and carrots, continuing to cook until vegetables are soft, approximately 30 minutes.
  8. Season with salt and black pepper to taste before serving.
