Kungullur is a delightful vegetarian dish originating from the diverse culinary traditions of Albania. Ingredients

  • pumpkin – 1 kg / 2.2 lbs, peeled and cubed
  • onion – 1 large, finely chopped
  • olive oil – 3 tbsp / 45 ml
  • garlic – 3 cloves, minced
  • feta cheese – 200 g / 7 oz, crumbled
  • fresh mint – 1/4 cup / 10 g, chopped
  • fresh dill – 1/4 cup / 10 g, chopped
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. In a large pan, heat olive oil over medium heat. Add chopped onions and cook until translucent, about 5 minutes.
  3. Add minced garlic, stirring for an additional 1 minute until fragrant.
  4. Add the cubed pumpkin to the pan, season with salt and pepper, and stir well. Cook for another 5 minutes.
  5. Transfer the mixture into a baking dish and spread it evenly.
  6. Top with crumbled feta cheese, fresh mint, and dill.
  7. Bake in the preheated oven for 30-35 minutes, until the pumpkin is tender and the cheese is golden.
  8. Serve warm as a main course or as a side.
