Hailing from North Macedonia, Turli Tava is a rich and diverse stew that embodies the region’s agricultural bounty and its love for hearty, layered flavors. Translating to ‘mixed casserole,’ this dish historically combines a variety of meats and vegetables, baked slowly in an earthenware pot to extract deep flavors. It represents the heart of Macedonian cuisine, emphasizing communal eating and the rich tastes of the Balkans.
Ingredients
- beef chunks – 1 lb / 450 g
- lamb pieces – 1/2 lb / 225 g
- olive oil – 3 tbsp / 45 ml
- onion – 1 large, diced
- red bell pepper – 1, diced
- potatoes – 3 medium, peeled and cubed
- zucchini – 2, sliced
- eggplant – 1, cubed
- garlic cloves – 4, minced
- tomato paste – 2 tbsp / 30 g
- paprika – 1 tbsp / 15 g
- water – 2 cups / 480 ml
- salt – to taste
- black pepper – to taste
- fresh parsley – 1/4 cup / 15 g, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat and brown the beef and lamb pieces. Set aside.
- In the same skillet, sauté the onion until translucent, then add the red bell pepper and garlic, cooking for another 3 minutes.
- Add the tomato paste and paprika, stirring well to incorporate.
- Transfer the meat, sautéed vegetables, and raw vegetables (potatoes, zucchini, eggplant) into a large ovenproof dish. Mix well.
- Pour water over the mixture, season with salt and black pepper, and cover the dish.
- Bake in the preheated oven for about 1.5 to 2 hours, or until the meat is tender and the vegetables are fully cooked.
- Garnish with fresh parsley before serving.
