Zupa buraczkowa, or beet soup, is a traditional Polish dish that brings the earthy sweetness of beets into a harmonious blend with the tang of apples and the robustness of aromatic spices. Ingredients
- beetroots – 500 g / 1 pound, peeled and grated
- onion – 1 medium, chopped
- carrot – 1 large, sliced
- apple – 1 large, peeled and diced
- vegetable broth – 1 liter / 4 cups
- bay leaf – 1
- allspice berries – 3
- salt – 1 tsp
- black pepper – 1/2 tsp
- sour cream – 4 tbsp, for serving
- fresh dill – 2 tbsp, chopped
Instructions
- In a large pot, heat a small amount of oil over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes.
- Add the grated beetroots, sliced carrot, and diced apple to the pot. Stir and cook for another 5 minutes.
- Pour in the vegetable broth, add the bay leaf and allspice berries, and bring to a boil.
- Reduce heat to low and simmer for about 45-50 minutes, or until the beetroots are tender.
- Remove the bay leaf and allspice berries. Season with salt and black pepper, adjusting to taste.
- Serve hot with a dollop of sour cream and a sprinkle of fresh dill. Enjoy your hearty Polish soup!
