Travnički ćevapi is a traditional Bosnian dish originating from the picturesque town of Travnik. Known for its rich history and cultural significance, this dish showcases minced meat shaped into small sausages, usually grilled over charcoal for a smoky flavor. Traditionally served with somun (a type of Bosnian flatbread), onions, and sometimes a side of ajvar (a roasted pepper relish), Travnički ćevapi is a symbol of the hearty and communal eating style emblematic of the Balkans.

Ingredients

  • ground beef – 500 g / 1.1 lbs
  • ground lamb – 250 g / 0.55 lbs
  • garlic, minced – 3 cloves
  • baking soda – 1/2 tsp
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • sparkling water – 60 ml / 1/4 cup
  • somun bread – 4 pieces
  • onions, finely chopped – 2 medium

Instructions

  1. In a large bowl, mix the ground beef, ground lamb, minced garlic, baking soda, salt, and black pepper.
  2. Gradually add the sparkling water, mixing well until the ingredients are fully incorporated and the mixture is smooth.
  3. Shape the mixture into small, cigar-like sausages about 2 inches long.
  4. Cover and refrigerate the ćevapi for at least one hour to allow the flavors to meld.
  5. Preheat a grill or a grill pan over medium-high heat.
  6. Grill the ćevapi, turning occasionally, until cooked through and nicely charred on the outside, about 8-10 minutes.
  7. Serve hot with somun bread and a side of chopped onions.
