Tom Saep is a spicy and sour soup, originating from the northeastern region of Thailand, called Isaan. Known for its robust flavor profile, the soup is renowned for its combination of fiery chili, aromatic herbs, and a distinctive tang from lime juice. Traditionally, it’s made with beef or pork ribs but has evolved to include various meats or even shrimp. Tom Saep is a cherished dish, served in humble homes and bustling street markets across the country.

Ingredients

  • pork ribs – 1 lb / 450 g
  • water – 8 cups / 2 liters
  • lemongrass, sliced – 2 stalks
  • kaffir lime leaves, torn – 5 leaves
  • galangal, sliced – 1 inch / 2.5 cm piece
  • shallots, sliced – 3 medium
  • fresh Thai bird’s eye chilies, crushed – 8-10
  • fish sauce – 3 tbsp
  • lime juice – 3 tbsp
  • coriander leaves, chopped – 1/4 cup / 10 g
  • spring onions, chopped – 1/4 cup / 10 g
  • salt – 1 tsp

Instructions

  1. Bring water to boil in a pot and add the pork ribs. Simmer for 30 minutes, skimming any foam.
  2. Add lemongrass, kaffir lime leaves, galangal, and shallots to the pot. Simmer for another 20 minutes.
  3. Add chilies, fish sauce, and salt. Stir well and cook for 5 more minutes.
  4. Remove from heat. Stir in lime juice, then taste and adjust seasoning if necessary.
  5. Garnish with coriander and spring onions before serving.
