Ingredients

  • pasta (penne or rigatoni) – 300 g / 10.5 oz
  • chicory – 500 g / 1.1 lbs
  • ricotta cheese – 250 g / 8.8 oz
  • Parmesan cheese, grated – 100 g / 3.5 oz
  • eggs – 2 large
  • olive oil – 3 tbsp
  • garlic, minced – 2 cloves
  • nutmeg, grated – 1/4 tsp
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Cook the pasta in a large pot of salted boiling water until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat and sauté the garlic until fragrant. Add the chicory and cook until wilted. Season with salt, pepper, and nutmeg.
  4. In a large bowl, mix together the ricotta, half of the grated Parmesan, and eggs. Stir in the cooked chicory mixture and pasta.
  5. Grease a baking dish and spread the mixture evenly. Top with the remaining Parmesan cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden and firm.
  7. Allow to cool slightly before serving.
