Suugo is a traditional Somali pasta dish that embodies a fusion of flavors from both African and Middle Eastern influences. It typically features a rich, spicy tomato sauce, often made with cumin, coriander, and cardamom, served over spaghetti. This dish is a staple in many Somali households, offering a hearty and comforting meal that is both satisfying and aromatic.
Ingredients
- spaghetti – 400 g / 14 oz
- ground beef – 500 g / 1 lb
- onion, finely chopped – 1 large / 150 g
- garlic, minced – 3 cloves
- tomato paste – 2 tbsp / 30 g
- crushed tomatoes – 1 can / 400 ml
- cumin powder – 1 tsp / 2 g
- coriander powder – 1 tsp / 2 g
- cardamom pods – 2, crushed
- vegetable oil – 2 tbsp / 30 ml
- salt – 1 tsp / 5 g
- black pepper – 1/2 tsp / 2 g
- fresh coriander, chopped – 2 tbsp / 5 g
- water – 1/2 cup / 120 ml
Instructions
- Cook the spaghetti according to package instructions. Drain and set aside.
- Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it up with a spoon.
- Reduce the heat to medium and stir in the tomato paste, crushed tomatoes, cumin, coriander, cardamom, salt, and black pepper.
- Add the water and let the sauce simmer for 15-20 minutes, stirring occasionally, until it thickens.
- Serve the sauce over the cooked spaghetti. Garnish with fresh coriander.
