Shapkat, an Albanian culinary treasure, is a comforting and hearty casserole that showcases the Balkan region’s rich culinary traditions. Often made in rural Albanian homes, this dish combines layers of thinly sliced potatoes with a luscious sauce enriched by cheese and various vegetables. Traditionally baked in communal wood-fired ovens, Shapkat is a celebration of simplicity and flavor, capturing the essence of homemade comfort food.
Ingredients
- potatoes – 1 kg / 2.2 lbs, thinly sliced
- onion – 1 large, finely chopped
- red bell pepper – 1, chopped
- feta cheese – 200 g / 7 oz, crumbled
- milk – 500 ml / 2 cups
- eggs – 3 large
- olive oil – 60 ml / 1/4 cup
- salt – 1 tsp
- black pepper – 1/2 tsp
- paprika – 1/2 tsp
- parsley – 2 tbsp, chopped
Instructions
- Preheat your oven to 180°C (350°F).
- Spread olive oil evenly over the bottom of a large baking dish.
- Arrange a layer of thinly sliced potatoes in the dish, season with salt, pepper, and paprika.
- Scatter half of the chopped onion and red bell pepper over the potatoes.
- Repeat the layers with the remaining potatoes, onion, and bell pepper.
- In a bowl, whisk together the eggs and milk until well combined. Stir in the crumbled feta cheese and parsley.
- Pour the egg mixture evenly over the potatoes and vegetables.
- Cover the dish with foil and bake in the preheated oven for 45 minutes.
- Remove the foil and bake for an additional 20 minutes, or until the top is golden brown and the potatoes are tender.
- Let the casserole cool slightly before serving.
