Traditionally baked in communal wood-fired ovens, Shapkat is a celebration of simplicity and flavor, capturing the essence of homemade comfort food.

Ingredients

  • potatoes – 1 kg / 2.2 lbs, thinly sliced
  • onion – 1 large, finely chopped
  • red bell pepper – 1, chopped
  • feta cheese – 200 g / 7 oz, crumbled
  • milk – 500 ml / 2 cups
  • eggs – 3 large
  • olive oil – 60 ml / 1/4 cup
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • paprika – 1/2 tsp
  • parsley – 2 tbsp, chopped

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Spread olive oil evenly over the bottom of a large baking dish.
  3. Arrange a layer of thinly sliced potatoes in the dish, season with salt, pepper, and paprika.
  4. Scatter half of the chopped onion and red bell pepper over the potatoes.
  5. Repeat the layers with the remaining potatoes, onion, and bell pepper.
  6. In a bowl, whisk together the eggs and milk until well combined. Stir in the crumbled feta cheese and parsley.
  7. Pour the egg mixture evenly over the potatoes and vegetables.
  8. Cover the dish with foil and bake in the preheated oven for 45 minutes.
  9. Remove the foil and bake for an additional 20 minutes, or until the top is golden brown and the potatoes are tender.
  10. Let the casserole cool slightly before serving.
