Selsko Meso, or ‘Village Meat’, is a rustic North Macedonian dish rooted in its rich tradition of heartwarming stews. Originating from rural kitchens, Selsko Meso embodies the simplicity and depth of Balkan cuisine.

Ingredients

  • pork tenderloin – 500 g / 1.1 lbs
  • beef stew meat – 500 g / 1.1 lbs
  • onion, chopped – 1 large / 150 g
  • garlic cloves, minced – 3-4
  • fresh mushrooms, sliced – 250 g / 9 oz
  • red bell pepper, diced – 1 large / 150 g
  • tomato paste – 2 tbsp / 30 g
  • white wine – 120 ml / 0.5 cup
  • water – 240 ml / 1 cup
  • bay leaves – 2
  • paprika – 1 tbsp / 15 g
  • olive oil – 2 tbsp / 30 ml
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add pork and beef, cooking until evenly browned.
  2. Stir in onions and garlic, sauté until onions are soft.
  3. Add mushrooms and bell pepper, continue to sauté for 5 minutes.
  4. Mix in tomato paste, wine, and water. Bring to a boil.
  5. Add bay leaves and paprika, then reduce heat to low.
  6. Simmer for 90 minutes, stirring occasionally, until the meat is tender.
  7. Season with salt and pepper before serving.
