Selsko Meso, or ‘Village Meat’, is a rustic North Macedonian dish rooted in its rich tradition of heartwarming stews. This dish, known for its comfort and robust flavors, combines tender meat with earthy mushrooms and a blend of spices, making it a staple in Macedonian homes, especially during festive occasions. Ingredients
- pork tenderloin – 500 g / 1.1 lbs
- beef stew meat – 500 g / 1.1 lbs
- onion, chopped – 1 large / 150 g
- garlic cloves, minced – 3-4
- fresh mushrooms, sliced – 250 g / 9 oz
- red bell pepper, diced – 1 large / 150 g
- tomato paste – 2 tbsp / 30 g
- white wine – 120 ml / 0.5 cup
- water – 240 ml / 1 cup
- bay leaves – 2
- paprika – 1 tbsp / 15 g
- olive oil – 2 tbsp / 30 ml
- salt – to taste
- black pepper – to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add pork and beef, cooking until evenly browned.
- Stir in onions and garlic, sauté until onions are soft.
- Add mushrooms and bell pepper, continue to sauté for 5 minutes.
- Mix in tomato paste, wine, and water. Bring to a boil.
- Add bay leaves and paprika, then reduce heat to low.
- Simmer for 90 minutes, stirring occasionally, until the meat is tender.
- Season with salt and pepper before serving.
