Revolcado is a traditional Guatemalan stew known for its rich and hearty flavors. Steeped in history, this dish often features a complex blend of spices, tomatoes, and meat, traditionally pig’s head or innards, which is simmered slowly to create a flavorful and warming dish. Over the years, it has become a cherished comfort food, symbolizing familial bonds and culinary heritage in Guatemalan households.

Ingredients

  • pig’s head – 1 (approx. 2 kg)
  • tomatoes – 8 large / 1 kg
  • red bell peppers – 2 medium / 150 g
  • onions – 2 large / 300 g
  • garlic – 6 cloves / 30 g
  • cumin – 1 tsp / 5 g
  • allspice – 1/2 tsp / 1.5 g
  • pepper – 1 tsp / 5 g
  • bay leaves – 2
  • oil – 2 tbsp / 30 ml
  • salt – to taste
  • corn tortillas – 6, for serving
  • water – 4 cups / 960 ml

Instructions

  1. Clean the pig’s head thoroughly and cut it into manageable pieces.
  2. In a large pot, heat oil over medium heat. Add onions, garlic, and bell peppers, and sauté until onions are translucent.
  3. Add chopped tomatoes and cook until they break down completely.
  4. Add cumin, allspice, pepper, and bay leaves. Stir well to combine.
  5. Add the pig’s head pieces to the pot. Pour in water and bring to a boil.
  6. Reduce heat, cover, and simmer for approximately 2-3 hours, or until the meat is tender and falling off the bone.
  7. Season with salt to taste. Remove bay leaves before serving.
  8. Serve hot with corn tortillas on the side.
