Ingredients

  • beef chuck roast – 2 pounds / 900 g
  • onion – 1 large, chopped
  • tomatoes – 3 medium, chopped
  • garlic – 4 cloves, minced
  • bell pepper – 1 large, chopped
  • vegetable oil – 3 tablespoons
  • beef stock – 2 cups / 480 ml
  • potatoes – 4 medium, peeled and quartered
  • cilantro – 1/4 cup, chopped
  • cumin powder – 1 teaspoon
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Season beef with salt and pepper.
  2. In a large pot, heat oil over medium heat. Brown the beef on all sides, then remove from the pot.
  3. In the same pot, add onion, garlic, and bell pepper. Sauté until onions are translucent.
  4. Add tomatoes and cumin powder, cooking until the tomatoes break down.
  5. Return beef to the pot and add beef stock. Bring to a simmer, cover, and cook for about 1.5 hours or until the beef is tender.
  6. Add potatoes to the pot and cook for another 30 minutes, until they are tender.
  7. Stir in cilantro and adjust seasoning with salt and pepper before serving.
