- Spanish chorizo – 200 g / 7 oz

- red bell pepper, diced – 1 small / 120 g
- garlic cloves, minced – 3 cloves / 15 g
- tomato, diced – 2 large / 300 g
- extra virgin olive oil – 2 tbsp / 30 ml
- bay leaf – 1 leaf
- paprika – 1 tsp / 5 g
- salt – to taste
- black pepper – to taste
- chicken broth – 4 cups / 960 ml
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced onions and red bell pepper. Sauté until softened, about 5 minutes.
- Stir in minced garlic and diced chorizo. Cook for another 3 minutes.
- Add diced tomatoes and cook until softened, about 5 minutes.
- Stir in pochas beans, bay leaf, and paprika.
- Pour in the chicken broth, season with salt and pepper.
- Bring to a boil, then reduce heat to a simmer.
- Simmer uncovered for about 45-60 minutes or until beans are tender.
- Adjust seasoning as needed. Serve hot.
