  • tomato, diced – 2 large / 300 g
  • extra virgin olive oil – 2 tbsp / 30 ml
  • bay leaf – 1 leaf
  • paprika – 1 tsp / 5 g
  • salt – to taste
  • black pepper – to taste
  • chicken broth – 4 cups / 960 ml

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onions and red bell pepper. Sauté until softened, about 5 minutes.
  3. Stir in minced garlic and diced chorizo. Cook for another 3 minutes.
  4. Add diced tomatoes and cook until softened, about 5 minutes.
  5. Stir in pochas beans, bay leaf, and paprika.
  6. Pour in the chicken broth, season with salt and pepper.
  7. Bring to a boil, then reduce heat to a simmer.
  8. Simmer uncovered for about 45-60 minutes or until beans are tender.
