Ingredients

  • Aji caballero peppers – 10 peppers
  • Garlic – 4 cloves, minced
  • Bay leaves – 2
  • Pineapple juice – 1/2 cup / 120 ml
  • White vinegar – 1 cup / 240 ml
  • Salt – 1 teaspoon
  • Black peppercorns – 1 teaspoon
  • Olive oil – 1 tablespoon

Instructions

  1. Slice the peppers and combine them with the minced garlic in a medium-sized glass jar.
  2. Add the bay leaves, pineapple juice, vinegar, salt, and peppercorns to the jar.
  3. Pour olive oil over the mixture to cover.
  4. Seal the jar and shake it to mix all the ingredients thoroughly.
  5. Let the pique sit in a cool, dark place for at least three days to allow the flavors to meld.
  6. Shake the jar daily to ensure even distribution of flavors.
  7. Strain before serving to remove solid ingredients, if preferred.
