Panzanella is a vibrant, rustic Italian salad hailing from the Tuscan region. This classic dish transforms stale bread and ripe, juicy tomatoes into a celebration of Italian rural simplicity and ingenuity. Traditionally, it combines sun-ripened tomatoes, crunchy cucumbers, fragrant basil, and stale bread that soaks up the flavorful dressing, making it a beloved example of cucina povera – a cuisine of the poor that turns basic ingredients into a gourmet delight.
Ingredients
- Stale country bread – 4 cups / 240 g, cubed
- Ripe tomatoes – 4 medium / 600 g, chopped

- Red onion – 1 small / 70 g, thinly sliced
- Fresh basil leaves – 1 cup / 30 g, torn
- Olive oil – 1/4 cup / 60 ml
- Red wine vinegar – 2 tablespoons / 30 ml
- Salt – 1 teaspoon / 5 g
- Black pepper – 1/2 teaspoon / 2 g
Instructions
- Start by soaking the cubed stale bread in water for about 1 minute, then squeeze out the excess water and place the bread in a large mixing bowl.
- Add the chopped tomatoes, diced cucumber, sliced red onion, and torn basil leaves to the bowl with the bread.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper.
- Pour the dressing over the salad and toss everything gently to combine.
- Let the salad sit for at least 30 minutes before serving to allow the bread to absorb the flavors.
