Ingredients

  • Stale country bread – 4 cups / 240 g, cubed
  • Ripe tomatoes – 4 medium / 600 g, chopped

  • Fresh basil leaves – 1 cup / 30 g, torn
  • Olive oil – 1/4 cup / 60 ml
  • Red wine vinegar – 2 tablespoons / 30 ml
  • Salt – 1 teaspoon / 5 g
  • Black pepper – 1/2 teaspoon / 2 g

Instructions

  1. Start by soaking the cubed stale bread in water for about 1 minute, then squeeze out the excess water and place the bread in a large mixing bowl.
  2. Add the chopped tomatoes, diced cucumber, sliced red onion, and torn basil leaves to the bowl with the bread.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper.
  4. Pour the dressing over the salad and toss everything gently to combine.
  5. Let the salad sit for at least 30 minutes before serving to allow the bread to absorb the flavors.
