Ingredients
- Beef chuck – 1 lb / 450 g
- Coconut milk – 2 cups / 480 ml
- Massaman curry paste – 3 tbsp / 45 g
- Potatoes – 2 medium, diced
- Onions – 1 large, sliced
- Unsalted peanuts – 1/4 cup / 40 g
- Fish sauce – 2 tbsp / 30 ml
- Tamarind paste – 1 tbsp / 15 g
- Brown sugar – 2 tbsp / 24 g
- Cinnamon stick – 1 piece
- Cardamom pods – 4 pods
- Bay leaf – 1 leaf
- Lime juice – 1 tbsp / 15 ml
- Vegetable oil – 2 tbsp / 30 ml
Instructions
- Heat vegetable oil in a large pot over medium heat. Add the Massaman curry paste and sauté until fragrant.
- Add beef and cook until browned on all sides.
- Pour in the coconut milk, and add cinnamon stick, cardamom pods, and bay leaf. Bring to a simmer.
- Stir in fish sauce, tamarind paste, and brown sugar. Mix well.
- Add potatoes, onions, and peanuts. Cover and simmer until the beef and potatoes are tender, about 1 hour.
- Stir in lime juice before serving.
