Liboké de viande is a succulent traditional dish from the Republic of Congo, renowned for its aromatic flavors and unique preparation method. Ingredients
- beef – 500 g / 1.1 lb, cut into cubes
- banana leaves – 4 large
- onion – 1 large / 150 g, chopped
- tomato – 2 medium / 200 g, chopped
- garlic cloves – 3 cloves, minced
- bell peppers – 1 large / 150 g, chopped
- palm oil – 2 tablespoons / 30 ml
- peanut butter – 3 tablespoons / 45 g
- salt – 1 teaspoon / 5 g
- black pepper – 1 teaspoon / 5 g
- chili pepper – 1, chopped
Instructions
- Rinse the banana leaves and pat them dry.
- In a large bowl, mix beef cubes with chopped onion, tomato, garlic, bell peppers, palm oil, peanut butter, salt, black pepper, and chili pepper until well-coated.
- Place equal portions of the beef mixture onto each banana leaf.
- Fold the leaves to securely wrap the meat, and tie with cooking string if necessary.
- Steam the parcels for 1 hour over medium heat or until the beef is tender.
- Open the parcels and serve hot, allowing the aromatic steam to enhance the dining experience.
