Ingredients

  • beetroots – 2 medium / 300 g
  • cucumber – 1 / 120 g
  • radishes – 5 / 100 g
  • spring onions – 4 / 40 g
  • dill – a small bunch / 15 g
  • kefir or buttermilk – 4 cups / 960 ml
  • lemon juice – 2 tablespoons / 30 ml
  • sour cream – 1/2 cup / 120 g
  • sugar – 1 teaspoon / 5 g
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Boil the beetroots in a pot until tender, about 30-40 minutes. Allow them to cool, then peel and grate.
  2. Dice the cucumber, radishes, and chop the spring onions and dill finely.
  3. In a large bowl, combine the grated beets, diced cucumber, radishes, spring onions, and dill.
  4. Pour in the kefir or buttermilk and stir well to combine all ingredients.
  5. Mix in the lemon juice, sugar, salt, and black pepper according to taste.
  6. Chill the soup in the refrigerator for at least 2 hours before serving garnished with a dollop of sour cream.
