Kapuśniak, a classic Polish soup, is the epitome of comfort food that exemplifies traditional Eastern European culinary simplicity. The main ingredient, sauerkraut, gives this soup its distinct tangy flavor, making it a perfect dish for cold winter days. Ingredients

  • sauerkraut – 500 g / 4 cups
  • smoked pork ribs – 500 g / 1 lb
  • potatoes – 300 g / 2 large
  • carrot – 100 g / 1 large
  • celery root – 100 g / 1 small
  • onion – 150 g / 1 large
  • bay leaves – 3
  • allspice berries – 5
  • black peppercorns – 1 tsp
  • water – 2 liters / 8 cups
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Rinse the sauerkraut under cold water, drain, and set aside.
  2. In a large pot, add the smoked pork ribs and cover with water. Bring to a boil, reduce heat, and simmer for 30 minutes.
  3. Add sauerkraut to the pot along with bay leaves, allspice berries, and black peppercorns. Simmer for another 30 minutes.
  4. Peel and cube the potatoes, carrot, and celery root.
  5. In a separate pan, sauté the onion until golden. Add it to the pot.
  6. Add the cubed vegetables to the pot and continue to simmer until the vegetables are tender, about 20 minutes.
  7. Season with salt and black pepper to taste.
  8. Serve hot with fresh rye bread.

  • celery root -> parsnip
