Ingredients

  • lamb shoulder, cubed – 2 lbs / 900 g
  • onions, sliced – 2 large
  • potatoes, peeled and quartered – 4 large
  • carrots, sliced – 3 large
  • celery sticks, sliced – 2
  • garlic cloves, minced – 4
  • salt – 2 tsp
  • black pepper – 1 tsp
  • thyme, dried – 1 tsp
  • bay leaves – 2
  • beef stock – 4 cups / 1 liter
  • butter – 2 tbsp / 28 g
  • flour – 2 tbsp / 16 g

Instructions

  1. Melt the butter in a large pot over medium heat. Add the lamb and brown all sides until caramelized, about 5 minutes.
  2. Add the onions and garlic, sautéing until the onions are translucent.
  3. Sprinkle the flour over the meat and mix well to coat. Cook for another 2 minutes to remove the raw flour taste.
  4. Pour in the beef stock, stirring to deglaze the pot. Add the potatoes, carrots, celery, bay leaves, thyme, salt, and pepper.
  5. Bring to a boil, then reduce to a simmer. Cover and cook for about 1.5 to 2 hours until the lamb is tender, and the potatoes are soft. Stir occasionally, ensuring nothing sticks to the bottom.
  6. Adjust seasoning if necessary before serving.
