Hang Lay Curry, or Kaeng Hang Le, is a traditional Northern Thai stew known for its rich, tangy, and spicy flavors. Originating from the Lanna Kingdom, this dish is a staple in the mountainous regions of Thailand and Myanmar. It’s characterized by its use of aromatic spices, tender pork, and a distinctive tamarind tang, offering a perfect balance between sweet and savory. This dish showcases the historical influences of Burmese cuisine in Northern Thailand.

Ingredients

  • Pork shoulder – 500 g / 1.1 lbs
  • Tamarind paste – 2 tbsp
  • Ginger paste – 1 tbsp
  • Garlic cloves, minced – 6 cloves
  • Shallots, finely chopped – 4 small
  • Turmeric powder – 1 tsp
  • Red curry paste – 2 tbsp
  • Fish sauce – 2 tbsp
  • Brown sugar – 1 tbsp
  • Peanuts, roasted and crushed – 50 g / 1.8 oz
  • Vegetable oil – 2 tbsp
  • Water – 2 cups / 480 ml

Instructions

  1. Cut the pork shoulder into 2-inch cubes.
  2. In a large pot, heat the vegetable oil over medium heat. Add the ginger paste, garlic, shallots, turmeric powder, and red curry paste. Sauté until fragrant.
  3. Add pork cubes to the pot and cook until the meat is browned.
  4. Stir in tamarind paste, fish sauce, brown sugar, and water. Bring to a boil, then reduce the heat and let simmer for 1 hour until the pork is tender.
  5. Add crushed peanuts and continue to simmer for another 15 minutes to thicken the sauce.
  6. Serve hot with steamed rice.
