Hang Lay Curry, or Kaeng Hang Le, is a traditional Northern Thai stew known for its rich, tangy, and spicy flavors. Originating from the Lanna Kingdom, this dish is a staple in the mountainous regions of Thailand and Myanmar. It’s characterized by its use of aromatic spices, tender pork, and a distinctive tamarind tang, offering a perfect balance between sweet and savory. This dish showcases the historical influences of Burmese cuisine in Northern Thailand.
Ingredients
- Pork shoulder – 500 g / 1.1 lbs
- Tamarind paste – 2 tbsp
- Ginger paste – 1 tbsp
- Garlic cloves, minced – 6 cloves
- Shallots, finely chopped – 4 small
- Turmeric powder – 1 tsp
- Red curry paste – 2 tbsp
- Fish sauce – 2 tbsp
- Brown sugar – 1 tbsp
- Peanuts, roasted and crushed – 50 g / 1.8 oz
- Vegetable oil – 2 tbsp
- Water – 2 cups / 480 ml
Instructions
- Cut the pork shoulder into 2-inch cubes.
- In a large pot, heat the vegetable oil over medium heat. Add the ginger paste, garlic, shallots, turmeric powder, and red curry paste. Sauté until fragrant.
- Add pork cubes to the pot and cook until the meat is browned.
- Stir in tamarind paste, fish sauce, brown sugar, and water. Bring to a boil, then reduce the heat and let simmer for 1 hour until the pork is tender.
- Add crushed peanuts and continue to simmer for another 15 minutes to thicken the sauce.
- Serve hot with steamed rice.
