Ingredients

  • Green curry paste – 1/4 cup / 60 g
  • Coconut milk – 400 ml / 13.5 oz
  • Chicken breast – 500 g / 1 lb, sliced
  • Bamboo shoots – 200 g / 7 oz, sliced
  • Thai eggplants – 100 g / 3.5 oz, quartered
  • Kaffir lime leaves – 4 leaves, torn
  • Fish sauce – 2 tbsp / 30 ml
  • Palm sugar – 1 tbsp / 15 g
  • Fresh basil leaves – 50 g / 2 oz
  • Lime juice – 1 tbsp / 15 ml
  • Jasmine rice – 2 cups / 400 g, cooked

Instructions

  1. 1. Heat a tablespoon of vegetable oil in a large pan over medium heat. Add the green curry paste and sauté for 1-2 minutes until fragrant.
  2. 2. Slowly stir in the coconut milk and bring it to a gentle simmer.
  3. 3. Add the sliced chicken breast, bamboo shoots, and Thai eggplants. Simmer for about 10 minutes, or until the chicken is cooked through.
  4. 4. Stir in the kaffir lime leaves, fish sauce, and palm sugar. Adjust to taste if necessary.
  5. 5. Add fresh basil leaves and lime juice, cooking for another 2 minutes.
  6. 6. Serve hot over jasmine rice.
