Ingredients

  • Black Cod (Gindara) – 1 lb / 450 g
  • Soy Sauce – 1/2 cup / 120 ml
  • Mirin – 1/2 cup / 120 ml
  • Sake – 1/4 cup / 60 ml
  • Sugar – 2 tablespoons / 25 g
  • Garlic, minced – 2 cloves
  • Ginger, grated – 1 tablespoon / 15 g
  • Green Onions, chopped – 2 stalks
  • Sesame Seeds (optional) – 1 tablespoon / 10 g

Instructions

  1. In a bowl, mix soy sauce, mirin, sake, sugar, garlic, and ginger until the sugar dissolves.
  2. Place the black cod fillets in a shallow dish and pour the marinade over them, reserving a small amount for glazing later.
  3. Marinate the fish in the refrigerator for at least 30 minutes, or up to overnight for better flavor absorption.
  4. Preheat a grill or broiler to high heat.
  5. Remove the fish from the marinade and pat dry with paper towels; discard used marinade.
  6. Grill or broil the fish for 5-7 minutes on each side, basting occasionally with reserved marinade, until the fish is cooked through and starts to caramelize on top.
  7. Serve hot, garnished with chopped green onions and sesame seeds.
