Ingredients

  • young green jackfruit, sliced – 1 pound / 450 g
  • coconut milk – 2 cups / 480 ml
  • shrimp, peeled and deveined – 200 g / 7 oz
  • garlic, minced – 4 cloves
  • onion, chopped – 1 medium
  • ginger, thinly sliced – 1 inch piece
  • green chili peppers – 2 pieces
  • cooking oil – 2 tablespoons
  • fish sauce – 2 tablespoons
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Heat the oil in a large pan over medium heat. Sauté garlic, onion, and ginger until fragrant.
  2. Add the sliced jackfruit and cook for about 5 minutes, stirring occasionally.
  3. Pour in the coconut milk and bring to a gentle simmer. Add the green chili peppers.
  4. Stir in the fish sauce and season with salt and pepper to taste.
  5. Allow the mixture to simmer uncovered for 20-25 minutes, or until the jackfruit is tender.
  6. Add the shrimp and cook for an additional 5 minutes, or until the shrimp are pink and cooked through.
  7. Serve hot with steamed rice.
