Ingredients

  • chickpeas – 2 cups / 400 g, soaked overnight
  • beef shank – 500 g / 1 lb
  • bacon – 150 g / 5 oz
  • chorizo sausage – 150 g / 5 oz
  • black pudding – 150 g / 5 oz
  • potatoes – 4 medium, peeled and cubed
  • cabbage – 1 small head, roughly chopped
  • onion – 1 large, chopped
  • garlic – 4 cloves, minced
  • bay leaves – 2
  • salt – to taste
  • black pepper – to taste
  • olive oil – 2 tbsp

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, sauté until the onion is translucent.
  2. Add the beef shank, bacon, and chorizo to the pot, browning the meats on all sides.
  3. Add soaked chickpeas, bay leaves, and cover everything with water. Bring to a boil, then reduce heat and let simmer for about 1.5 hours.
  4. Add potatoes, cabbage, black pudding, salt, and pepper. Continue to simmer for another hour until everything is tender and flavorful.
  5. Taste and adjust seasoning as needed before serving.
