Ingredients

  • chicken thighs – 1 lb / 450 g
  • carrots – 2, diced
  • celery stalks – 2, diced
  • onion – 1 large, chopped
  • red bell pepper – 1, diced
  • potatoes – 2 medium, cubed
  • tomato paste – 2 tbsp / 30 g
  • borscht or lemon juice – 1/2 cup / 120 ml
  • parsley – 1/4 cup / 15 g, chopped
  • dill – 1/4 cup / 15 g, chopped
  • vegetable broth – 6 cups / 1.5 L
  • salt – to taste
  • black pepper – to taste
  • sour cream – for serving

Instructions

  1. Place the chicken thighs in a large pot and cover with vegetable broth. Bring to a boil, then reduce to a simmer, and cook for 20 minutes.
  2. Add the diced carrots, celery, onion, red bell pepper, and potatoes to the pot. Continue to simmer for 15 minutes or until the vegetables are tender.
  3. Stir in the tomato paste and borș or lemon juice. Season with salt and black pepper. Simmer for another 5 minutes.
  4. Remove the chicken from the pot, shred the meat, and return it to the soup.
  5. Stir in the chopped parsley and dill before serving.
  6. Serve hot with a dollop of sour cream and crusty bread.
