- vegetable broth – 2 cups / 480 ml
- fresh rosemary, finely chopped – 2 tbsp / 10 g
- tomato paste – 2 tbsp / 30 g
- salt – to taste
- black pepper – to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for an additional minute.
- Add the drained chickpeas to the pot, stirring to coat them in the onion and garlic mixture.
- Pour in the vegetable broth along with the tomato paste, stirring well to combine.
- Bring the mixture to a simmer, then reduce the heat to low and add the chopped rosemary.
- Season with salt and black pepper to taste.
- Simmer uncovered for 25-30 minutes, allowing the flavors to meld and the stew to thicken.
- Serve warm, garnished with additional rosemary if desired.
